Being Italian, I make these all the time. Love zucchini and what a wonderful way of using up all those zucchini in the garden. Make sure your oil is hot before putting patties in. If not, they will be very greasy.
3 CUPS GRATED ZUCCHINI (SQUEEZED LIQUID OUT)
1 T. DRIED PARSLEY OR 2 T. FRESH (I use fresh)
SALT AND PEPPER TO TASTE
2 t. GARLIC POWDER
3 CLOVES GARLIC
1 CUP FLOUR
1/3 CUP PARMESAN CHEESE
MIX ALL INGREDIENTS. SET ASIDE FOR 20 MINUTES
TAKE A 10″ FRY PAN AND ADD 3 T. OIL (OIL OF YOUR CHOICE)
TAKE A LARGE SPOON OF ZUCCHINI MIX AND PLACE IN HOT OI
FILL PAN WITHOUT CROWDING.
EAT WHILE STILL WARM.
