HOMEMADE SEMOLINA PASTA

 

This recipe makes 1 1/3 lb. pasta

TOSS WITH WHATEVER KIND OF SAUCE YOU WOULD LIKE

(veggies and sauce, meat and sauce)

INGREDIENTS:

2 1/2 cups semolina pasta (most grocery stores carry it in Bob’s Red Mill)

4 large eggs – whisked

I make my dough in my KitchenAid. Does a fantastic job of incorporating the ingredients and kneads it beautifully.

  • Place the semolina flour in your KitchenAid bowl.

  • Add your whisked eggs

  • Set the speed to number 2

  • Let the KitchenAid do its job.

  • If dough appears to be dry, add 1 tsp. of water at a time.

  • If you are happy with the texture, wrap dough in plastic wrap and set aside for at least 20 minutes.

  • I also use my KitchenAid pasta roller. I set mine to #5

Make sure you flour your flattened pasta sheets.

  • You can cut your pasta sheets by hand or you can use your pasta machine.

  • The more semolina a dough has the tougher it is to knead by hand, placing it with a dough hook in stand electric mixer.

When you cook and taste it, it’s find it’s worth the effort.
