HOMEMADE LASAGNE ROLL-UPS
*1 box lasagne noodles (I make my own)
1-2 containers whole ricotta (drained)
2-3 eggs (depending how much ricotta is being used)
1/4 cup chopped fresh parsley
1/2 t. garlic powder
salt & pepper (your choice
1 cup mozzerella cheese
1/2 to 1 cup parmesan cheese
Jarred sauce (your preference) I make my own)
DIRECTIONS FOR PREPARING FILLING:
In a bowl, add first 6 ingredients.
*PARBOIL (2-3 minutes less than what it says on box)
Prepare your 9”X13” pan with cooking spray. Begin with 1/2 cup spaghetti sauce, spread on prepared pan. Add enough lasagne noodles to make a base.
Spread your ricotta mixture on lasagne noodles. Add as much mozzerella cheese you want. Sprinkle parmesan cheese on what is already in pan. Add some spaghetti sauce
Continue until all the ingredients are in the pan. On top of final layer of noodles, add mozzerella & parmesan cheese
Preheat oven to 350º for 45-50 mins. Place cooking spray on aluminum foil before covering lasagne. The last 15 mins, uncover lasagne, so that it browns on top.
Take out of oven and place on cooling rack for at least 15 minutes before slicing.
